Kathleen Maher is sharing her Pumpkin-Chocolate Chip Bread recipe today. May I just say....YUM-O?
Autumn is my favorite weather season. As the temps turn cooler, the leaves turn color and eventually dance their way to the ground. I still love to hear the crunch under my feet as I run and stomp -- er, I mean sedately walk through --- the puddles they've formed on the ground. And well, there's just something special in the air. And no, I'm not talking about all the things that get my allergies revved up. Despite that, there's just something about the fall season that I've always loved, even as a small child. But I'm not technically posting about how much I love autumn, I just had to throw that in there. Today is Friday, so let's have some fun in the kitchen!
Remember, when you walk by the pumpkin displays or see the signs advertising pumpkin cappuccino (Really? Seriously? Cappuccino?), don't forget that pumpkins aren't just for pie, and... ahem, cappuccinos. There are all kinds of things you can make with pumpkin. And I think Kathleen's Pumpkin-Chocolate Chip Bread should be at the top of the list. Sounds delicious!

Recipe for Pumpkin-Chocolate Chip Bread
1 C butter
1 C granulated Sugar
1 C dark brown sugar
4 eggs
1 C pumpkin
2 ¾ C flour
1 t salt
1 t baking soda
2 t baking powder
1 T pumpkin pie spice (or 1 t cinnamon, 1 t nutmeg, ½ t cloves, ¼ t ginger)
1 C chocolate chips
1 C walnuts (optional)
Cream butter and sugar. Add pumpkin and eggs one at at time, beating well. Add dry ingredients and chocolate chips. Bake in loaf pans @ 350 F for 1 hour 10 minutes. Cool on racks. Enjoy with your favorite tea or coffee. <3
